Homemade SALSA!

I got this recipe from my MIL about two weeks ago. I had made salsa the week prior for Fathers Day and it was…. interesting. LOL. So here is the recipe I got from her that is wayyyyy better than my original recipe. Beware, it is addicting!

Ingredients:

  • 1 can roasted tomatoes
  • 2 cans Rotel seasoned diced green chilis & tomatoes
  • 2 jalapeños
  • 1/2 white onion
  • 1/2 cup fresh cilantro
  • 1tbsp salt
  • 1 tbsp cayenne pepper
  • 1tsp cumin

I pulsed everything in my food processor until it was the consistency I wanted. Make sure to taste and see if you want to add any seasonings to taste. Jar and ENJOY!

This is actually a very fitting first blog for me. I have been OBSESSED with acai bowls for a while now and I finally figured out the best recipe {thats not 800 calories!} and has the best consistency. The consistency is everything when it comes to these. The only appliance you will need for this is a blender of any kind {high powered preferably} or a food processor. I use my cuisinart food processor. Okay, here are the ingredients you will need:

  • 1/2 cup organic frozen berry blend
  • 1/2 of a frozen banana  {I freeze my own} & 1 unfrozen banana
  • 1/4 cup cashew milk or almond milk
  • 1 tbsp chia seeds
  • 1/4 cup Nature Valley granola
  • 1 tbsp sunflower butter
  • 1/4 cup blueberries
  • 2 tbsp coconut flakes
