Mexican Street Corn Soup

This recipe is long overdue considering I made this almost two months ago! A goal of mine in the new year is to post more consistently so heres to hoping! This soup is so easy {like most things I cook} and super yum. I looooove mexican street corn and this soup is no different. I used canned corn because we bought so many from Costco and I needed to use them up, but you can use fresh! Here is what you’ll need.

  • 2 chicken breast
  • 1 small jar of salsa
  • 4 cans of corn {drained and rinsed}
  • 1 can chicken broth
  • 1/4 cup sour cream
  • 2-3 fresh jalapenos
  • 1 yellow onion
  • 1 tsp cayenne
  • Cojita cheese for garnish
  • Cilantro for garnish
  • Chili Powder or Tajin
  • Salt & pepper to taste

You start by adding your chicken breast to the crock pot with your jar of salsa. Cook on high for 4 hours. Now chop your onion and jalapeno and saute with olive oil until onions are translucent. Add your cayenne if you want extra spice.


Then you will rinse and drain all of your cans of corn and add of the cans to pot. Keep one for garnish. Also add your can of chicken broth. IMG_1509.jpg

Let this simmer for a bit then your can either add to blender or use an immersion blender until smooth. Add your sour cream and blend some more. IMG_1511.jpg

You want it to be a really smooth consistency. Once that is done you will add your chicken! I always use my kitchen aid mixer to shred my chicken.


Preheat your oven to broil. Place your last can of corn on a foil lined baking sheet with olive oil, salt and pepper. Roast until golden {about 5 minutes}.


Add your shredded chicken to soup. IMG_1527.jpg


Now you are ready to plate! Garnish with corn, cojita cheese, chili powder {or tajin} and cilantro! Add as much of each as you please!
