Peanut Butter Cookies & Cream Cheesecake

Cheesecake is so decadent and delicious. My husbands favorite dessert is cheesecake and he is obsessed with anything that has Oreos in it. For this particular cheesecake I used the peanut butter Oreos but you can use whichever are your favorite. I decided to make this for my husband as a surprise this week since I have been sick and he has been such a good nurse! I also got a springform pan from our wedding and I really wanted to use it! 😂 Here’s what you’ll need:

  • 24 oz cream cheese
  • 1 cup sour cream
  • 1 tbsp vanilla extract
  • 3 eggs
  • 7 Oreos (reserve 3 for topping)
  • Whipped Cream (Optional)

  • 20 Oreos
  • 5 tbsp butter (I use salted for a salty sweet taste but that’s totally up to you).

Preheat your oven to 350 and wrap your spring form pan in foil if you plan on submerging it into a water bath to prevent cracks. You’ll start by processing your Oreos in a food processor til fine. Then add your melted butter!

Mix well and pat down to your spring foam pan.

Bake for 10 minutes. Let cool while you make your filling!

Mix softened cream cheese, sour cream and vanilla with stand mixer or hand mixer.

You will add your eggs slowly one by one. To be honest I have no idea why you do this but just do it:)! Lol.

Now add your crumbled Oreos into the mixture and it’s ready to go into your spring form pan!

Place the cheesecake on the lowest rack. I suggest submerging your cheesecake pan into a water bath to prevent it from cracking but you’re going to cover the top with whipped cream so no one will ever know if it does crack! You will bake at 350 degrees for 50-60 minutes.

Look at that beauty! Now time to let it cool for AT LEAST 4 hours or overnight. Once it’s completely cooled you can add toppings.

yumm! Enjoy!!
