Mouthwatering Lemon šŸ‹ & Blueberry Glazed Scones

I have always loved a good scone. Growing up my mom and I would go to Starbucks and our guilty pleasure was always a blueberry scone or the lemon pound cake to share. To me, there is nothing better than a scone and a hot cup of coffee or espresso. It makes my mouth water just thinking about it!

Baking does not come as easy to me as cooking and even I can’t mess these up. They’re so easy to make! Here is what you’ll need:

  • 2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 2 and 1/2 teaspoonsĀ baking powder
  • Ā½ teaspoonĀ salt
  • zest of 1 large lemon
  • 1/2 cupĀ unsalted butter, frozen
  • 1/2 cup heavy cream
  • 1 large Eggland’s Best egg
  • 1 teaspoonĀ vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • Glaze
  • 1 cup powdered sugar
  • 2-3 Tablespoons (30-45ml) fresh lemon juice

You’ll start by preheating your oven to 400 degrees and prepare your baking dish with parchment or silpat and set aside. Add 2 cups flour, 1/2 cup sugar, 2 1/2 tsp baking powder, & zest of 1 lemon in a bowl and mix. Now you’ll grate your stick of butter and add to bowl. Make sure your butter is cold. The colder the butter, the better. Now you’ll use either a fork or a pastry cutter to incorporate your butter. If you don’t have a pastry cutter and you bake a lot I highly suggest buying one. It just makes it so much quicker and it’s $5-$10 on Amazon. Now you will combine your 1 egg, 1/2 cup heavy cream, and 1tsp vanilla to another mixing bowl. Whisk together Now pour your wet into dry mixture. Use either your hands or a spatula to combine. Add blueberries, gently. Once combined you will lay a little flour down and form a disk with your dough, about 2 inches thick. Cut into 8 pieces. Assemble on your baking sheet. Place mid to lower rack in your oven and bake for 20-25 minutes. Time to start in your glaze! The easiest part. Use the same lemon you zested and cut in half to juice about 3 tbsp. Mix with 1 cup powdered sugar til smooth. Once your scones are finished baking you will let them cook for about 10 minutes and add your glaze!Look at these beauties!!!!! SO GOOD. ENJOY! šŸ˜
