Steak Salad w/ Goat Cheese & Caramelized Shallots

This is one of the easiest dinners and a favorite among my friends and family. If you don’t like goat cheese you can use any other cheese in its place or omit it completely. Totally up to you! This recipe makes two salads. Here is what you will need:

  • Small container 50/50 spring mix
  • 2 Shallots
  • 1 avocado
  • 2 oz goat cheese
  • 1tbsp ghee
  • Flank Steak {portions depend on how much protein intake you want I do 3oz on my salads}
  • Pecans
  • 1 tbsp coconut sugar
  • 1 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • Salt + pepper to taste

Start by chopping up your shallots to caramelize. Place into saute pan with 1 tsp olive oil and 1 tbsp ghee and cook until translucent and browned. IMG_8719.JPG

Now you will set your oven to broil and season steak both sides with seasoning of choice. I use Tonys. Place on baking sheet. IMG_8722.JPG

You will also prepare your pecans. I spray them with cooking spray and sprinkle with coconut sugar. These will go into the oven for 2 minutes before you place your steak in. Just lightly roast them. IMG_8721.JPG

Once you take these out of the oven put your steak in and cook for 6 minutes, flip and cook for another 5 minutes for medium/rare. IMG_8714.JPG

Let steak rest for 10 minutes for cutting. While your steak rests prepare your 50/50 mix. Place in a bowl and add balsamic, olive oil and salt and pepper to taste or any season you would like! IMG_8720.JPG

Slice up your avocado, cut your steak, and plate!
