Pine Nut & Sunflower Seed Pesto

My husband and I share a garden with my parents in their amazing backyard. My mom grows a ton of basil and we had so much I decided to make some pesto for the both of us. I made two jars of the traditional pine nut pesto and still had so much basil left that I decided to try it with sunflower seeds and I am so glad did. We couldn’t even choose which we liked best. For 1 cup of pesto you will need:

  • 3 cups basil
  • 1/4 cup pine nuts or sunflower seeds
  • 1/2 cup grated parmesan
  • 2 tbsp salt
  • 1 cup olive oil {I eyeballed this}
  • 1 tbsp minced garlic
  • Juice of 1/2 of a lemon

Combine all ingredients into your food processor or blender.IMG_8709.JPG

Once you’ve added everything to your food processor you will slowly add the olive oil. IMG_8704.JPG

Once everything is blended, add to jars and store in fridge!
