My Take on The Gladly Chopped Salad!

I had this salad at The Gladly two years ago and since then it has been in my top 3 salads OF ALL TIME. They also serve this at Cowboy Ciao. If you look this salad up it literally has its own Facebook page. Its that good. My husband has only had the one I make at home and requests it for dinner often. It is super easy and so bomb. I switched a few things up based off what I had in my cupboards and it was just as good. Use what you have!

  • Smoked Salmon {2oz per salad}
  • Arugala
  • Israeli cous cous
  • Grape tomatoes
  • Pistachios {recipe calls for sunflower seeds but I had pistachio on hand}
  • Craisins {or dried blueberries}
  • Dried corn {I used canned}
  • dried basil
  • Salt + Pepper to taste

Dressing:

  • 1cup mayonnaise {I used light mayo}
  • 1/3 cup buttermilk {I used low fat}
  • tablespoons romano cheese, grated
  • 24 fresh basil leaves
  • garlic clove, minced
  • juice of 1 lemon
  • Salt and pepper to taste

For the dressing combine all ingredients and blend. This makes a lot of dressing so you will have leftovers depending on how many salads you make!

Now that you have  your dressing made place it in the fridge to cool until you’re ready for it! Now you will make the cous cous. I normally use unflavored cous cous but I just used a boxed one I had that was garlic & basil.

Now you will chop your grape tomatoes in halves and season with balsamic, dried basil and salt and pepper. Then you will take your arugala and season with balsamic, olive oil and salt + pepper to taste. IMG_8734.JPG

Now combine your nuts, cheese, and dried blueberries.

I put all my ingredients on the counter for assembly. I do not chop up the salmon lox but you can if you would like.

Now you will assemble each ingredient in a line!
