Cauliflower Pizza! Pepperoni Jalapeño & BBQ Chicken!

This is one of my go to dinners and I think I have finally mastered the crust. The first time I made this it was super crumbly and you could not pick it up like a normal pizza. The trick is a little flour. You don’t have to add it or you could use less but it really helps with the structure of the pizza! Most recipes for cauliflower pizza call for cheese in the crust but I have found that makes it more wet. This recipe yields two 10″ pizzas.  Here is what you will need:

Cauliflower Crust:

  • 1 head of cauliflower
  • 1/4 cup flour {use any type of flour you want. I have used almond and white}
  • 2 eggs
  • 4 tbsp dried basil


  • 1 cup shredded mozzarella
  • turkey pepperoni
  • 1 chicken breast or 2 chicken thigh
  • pickled jalapeños
  • 1 white onion
  • 1/2 cup mushrooms
  • 1/4 cup pizza sauce
  • 1/4 cup bbq sauce

You will start by preheating your oven to 400 degrees and cut up your cauliflower. I use my Cuisinart food processor and I do half the head first and put into a bowl, then do the other half. My food processor can handle the whole thing but I have to scrape the sides a few times to get all the cauliflower processed and doing half just makes it easier. IMG_8273.JPG



Once you have processed the entire cauliflower you will steam it. I just use a glass bowl and place a towel over it and microwave it for 6 minutes!IMG_8271.JPG

While that is microwaving start on your toppings and chicken. Start by chopping up the onion and mushrooms and sauté them until caramelized. The trick to this is to not touch them on medium heat, stirring occasionally. Place in a bowl and put off to the side.



Your cauliflower will be done by now and you will place that in a towel and let it cool before you ring it out. Now we will start the chicken! Season on one side and on medium high heat place your chicken season side down. Oil your pan with olive oil beforehand. IMG_8263.JPG

You will cook each side for 7 minutes. Take off the heat and let it rest! While this is cooking you will prep your pizza trays. I use parchment paper and spray it will cooking spray. You don’t have to spray it but it will help tremendously with flipping your crust later on!



Now you will ring out your cauliflower. You are going to be shocked how much water will come out of the cauliflower, about 1 cup should come out! Once you have gotten most of the moisture out place it back into your bowl and add your flour, eggs, and basil.


Mix and it will look like the picture below.


Then I divide the cauliflower into halves. IMG_8260.JPG

Place one half on the parchment paper and you can either flatten with your hands or another piece of parchment {thats what I do}.



Bake your crust for 15 minutes and then flip and cook for another 15 minutes!IMG_8255.JPG


Add your toppings and bake for another 5 minutes or until cheese is melted!
